  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 small onion, thinly sliced
  • 2 cups mixed vegetables (such as bell peppers, carrots, broccoli, snap peas, mushrooms, etc.), thinly sliced or julienned

Instructions:

  1. Prepare the Noodles:

    • If using udon noodles, add a pinch of salt to the boiling water. If using soba noodles, no salt is needed.

    • Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process. Set aside.
  2. Prepare the Vegetable Stir-Fry:
    • In a large skillet or wok, heat the sesame oil or vegetable oil over medium-high heat.
    • Add the minced garlic and grated ginger to the skillet and sauté for about 30 seconds until fragrant.
    • Add the thinly sliced onion to the skillet and cook for another 2-3 minutes until it becomes soft and translucent.
  3. Add the Vegetables:
    • Add the mixed vegetables to the skillet, stirring constantly, and cook for about 5-7 minutes until they are tender-crisp.
    • Season the vegetables with soy sauce or tamari, rice vinegar, mirin or honey, and sesame seeds (if using). Stir well to combine.
    • Taste the vegetable stir-fry and adjust the seasoning with salt and pepper if needed.
  4. Combine the Noodles and Vegetables:
    • Add the cooked udon or soba noodles to the skillet with the vegetable stir-fry.
